  • The best peanut butter and chocolate chunk cookies

    These cookies are seriously the easiest, quickest and most delicious chocolate chunk cookies you will ever eat! It absolutely blows my mind that they are flour free! I wish I could take credit for these little lovelies but I am following a recipe from Dani Spies at cleananddelicious.com.  Make sure to check out her site/youtube channel as she has some fantastic recipes and healthy living advice! Half of my weekly meal menu is made up of her recipes : ) Aside from my mom, she is literally the woman that taught me to cook! These can be made with almond butter or peanut butter as the base. I prefer peanut butter simply because I love a good peanut butter cookie!

    You’ll need:

    -1 cup unsalted almond butter or peanut butter (if you only have salted just don’d add extra salt to recipe)

    -3/4 cup raw sugar

    -1 egg

    -1 tsp vanilla extract

    1 tsp salt

    1 tsp baking soda

    3 ounces dark chocolate, chopped

     

    Directions:

    Pre heat oven to 350 F

    Combine peanut butter, sugar, egg, vanilla, baking soda and salt in a large bowl and hand mix until everything is incorporated.

    Gently stir in chopped chocolate. (make sure to chop up a whole chocolate bar rather than use chips)

    Take a teaspoon size cookie dough, roll into small ball and place on a rimmed baking sheet lined with parchment paper.

    Bake for 10 minutes. Cool and store in an airtight container. Enjoy the best cookie you’ve ever made!

    Makes about 22 cookies (usually less for me because I make them a bit larger.)
