  • My glistening green smoothie

    Green smoothies are my favorite way to get in my daily dose of leafy greens and vegetables. Not a fan of the bitter taste of kale or the blah flavor of spinach? Not to worry! The key to a delicious green smoothie that doesn’t taste like your front lawn is adding a bit of fruit (specifically citrus) to brighten things up a bit. I’ll have this smoothie a few times per week for breakfast, especially in the summer months, as it is super refreshing. I also find green smoothies a fantastic way to get a boost of energy without turning to caffeine. Ready to get glistening? Here’s my super simple recipe for getting a bit of green goodness into your day.

    What you’ll need:

    1 handful spinach

    1 handful chopped and stemmed kale (or omit and do a bit more spinach)

    1/2 cup frozen pineapple

    1/4 cup frozen mango

    1/2 frozen banana

    1 celery stalk, chopped

    1 inch piece of cucumber cut into small pieces

    1/2 cup (roughly) coconut water, almond milk, cow’s milk, or liquid of your choice

     

     

    Optional add ins:

    1 teaspoon chia seeds or flax seeds

    1/2 teaspoon honey or agave

    1 teaspoon mama powder (gives it an earthier flavor, don’t go overboard with it!)

    1/4 cup Greek yogurt (adds a bit of extra protein and and creaminess)

    1 ice cube for extra chill

     

    I like to blend up my leafy greens with coconut water first so that I won’t find any lumps of spinach surprises in my smoothie.

    Once they’re nicely blended toss the rest of the ingredients in, blend until desired consistency and serve immediately! You can top with goji berries, chia seeds, shredded coconut or if you’re feeling really daring, a pinch of cayenne pepper : ). That’ll get those taste buds going first thing in the morning!

    There you have it! A super simple and delicious green smoothie that is loaded with vitamins, will boost your energy and save you from eating that serving of cooked spinach that you despise. Enjoy!
