  • Three Ingredient Gluten Free Pancakes

    My mind was absolutely blown the first time I made these little gems! They are simple, quick, healthy and delicious! I posted these a few weeks ago on my Instagram and had such a huge response that I wanted to share them on here. There’s barely a recipe to follow but I did learn about these beauties via Miranda Kerr. She did a “What I Eat In a Day” video with Harper’s BAZAAR on Youtube. In the video, she shared all of the deliciously healthy things she eats in a day (a bit concerning that my day of eating looks drastically different than hers, haha!) She makes these pancakes for her son as they are nutritious and super delicious (not to mention perfect if you’ve only got 5 minutes in the morning to eat.) Let’s get to it!

     

    You’ll need:

    • 2 eggs
    • 1/3 cup oats
    • 1 banana mashed

    Optional add ins:

    • A dash of cinnamon
    • A dash of vanilla extract

     

    Place all ingredients into a bowl and stir until combined. Toss the mixture into your blender for 10 seconds or until smooth. On a frying pan (or griddle) set at low temp., melt 1 tsp coconut oil or butter. Pour mixture into pan creating mini, silver dollar sized pancakes. Wait until you see a few bubbles in the batter and then flip. Cook on opposite side for 1 minute and voila! Delicious and nutritious mini pancakes! Top with fresh fruit and a bit of maple syrup or coconut nectar.

     

    These pancakes couldn’t be easier to make and are a delicious addition to your morning routine. You’ve got a decent bit of protein with the eggs and if you want to keep it gluten free, just use gluten free oats. Lately, I’ve been tossing in a bit of pumpkin pie spice to make them pumpkin pancakes. Absolutely drool worthy.
